Ingredients

  • 1 refrigerated pie crust
  • 1 pint blueberries
  • 1 6 oz package blackberries
  • 2 TB sugar
  • 1 TB cornstarch
  • 1 tsp lemon zest
  • Pinch salt
  • 1 egg beaten with 1 tsp water
  • 2 TB turbinado sugar
  • 4 oz crumbled imported Chèvre
  • 3 TB honey
  • Optional mint for garnish

Instructions

  1. Preheat your oven to 375 degrees and line a large baking pan with parchment paper. Toss berries with sugar, cornstarch, lemon zest, and salt. Place refrigerated pie crust in the center of the sheet and pile berry mixture in the center, leaving a 1 ½ inch border around the outside. Fold in the crust towards the center, crimping as you go. Brush the crust with beaten egg mixture and sprinkle with turbinado sugar. Bake for 35 minutes and top with crumbled imported Chevre. Bake for an additional 10 minutes or until berries are bubbly and cheese is melted. Let the galette cool slightly before drizzling with honey, garnishing with mint and slicing to enjoy.
