Southern Pimiento Cheese Spread

- 2 cups fresh grated imported Red Leicester cheese
- 1/2 cup imported Mascarpone cheese
- 6 TB finely chopped jarred pimiento peppers rinsed and dried well
- 1/4 cup mayonnaise
- 2 TB minced onion
- 1 1/2 tsp Dijon mustard
- 1/4 tsp Worcestershire sauce
- pinch each salt pepper, cayenne
- optional chives for garnish
Stir all ingredients together well to combine and season to taste.
May be made up to 3 days ahead and keeps well in the refrigerator up to 1 week.
Yields: 1 1/2 cups to serve 6-8
