Tricolor Roasted Carrots with imported Feta and Herbs

This easy colorful side dish is packed with flavor! Roasting carrots gives them a delicious char and brings out their natural sweetness. A dollop of creamy, tangy imported Feta cheese really makes this one a standout!

Ingredients

  • 1 lb tricolor carrots peeled and halved
  • 1 TB olive oil
  • 1 TB honey
  • 3/4 tsp kosher salt
  • 3/4 tsp cumin
  • 1/4 cup crumbled imported Feta cheese
  • 1 TB chopped fresh mint parsley, or cilantro

Instructions

  1. Line a baking pan with parchment paper and preheat your oven to 450 degrees. Toss carrots with olive oil, honey, salt, and cumin. Arrange in a single layer on prepared sheet and roast for 25 minutes or until tender and lightly charred. Serve carrots topped with feta and herbs.
