Tricolor Roasted Carrots with imported Feta and Herbs

- 1 lb tricolor carrots peeled and halved
- 1 TB olive oil
- 1 TB honey
- 3/4 tsp kosher salt
- 3/4 tsp cumin
- 1/4 cup crumbled imported Feta cheese
- 1 TB chopped fresh mint parsley, or cilantro
Line a baking pan with parchment paper and preheat your oven to 450 degrees. Toss carrots with olive oil, honey, salt, and cumin. Arrange in a single layer on prepared sheet and roast for 25 minutes or until tender and lightly charred. Serve carrots topped with feta and herbs.
This dish makes a great side or salad topper too! You can enjoy it hot, at room temp or chilled and it doubles easily for a crowd.
